Bacon-Cheddar Mashed Potatoes

Ingredients:

1/2 lb Chopped Bacon
2 lbs. Potatoes
Salt & Pepper
1/2 to 1 Stick Butter
1 Cup Milk
1/2 lb Grated Sharp Cheddar
1/4 Cup Minced Parsley

Directions:

1. Cook Bacon Until Crisp.
2. Make Classic Mashed Potatoes
    a. Cover potatoes with cold salted water.
    b. Simmer 45 minutes
    c. Drain and mash with 1/2 to 1 stick of butter.
    d. Add hot milk, and salt and pepper.
    5. Mash until smooth and fluffy
3. Fold in some bacon; sprinkle the rest on top.
4. Add Cheese and parsley
